Fresh Pineapple, cut into large cubes
Fresh Peaches, pitted, cut into quarters
Baby Portabella mushrooms, whole
Baby Mixed Peppers, whole
Wooden Skewers, 10 inches long, 25-count
LEMONETTE Zesty Cumin Dressing
Optional: Chicken Tenders or Seafood (Shrimp, Halibut, Sea Scallops)
Soak the wooden skewers in a shallow pan of water for 1-2 hours (this prevents the skewer from burning while grilling)
Pour Zesty Cumin dressing over the fruit, vegetables, and chicken/shrimp in a bowl.
Cover and refrigerate for 1-2 hours.
Once the skewers are soaked, and the ingredients are marinated, preheat the outdoor grill to medium heat.
Thread the marinated fruit, vegetables, and meat onto wooden skewers.
Reserve the bowl of marinade.
Grill the skewers over medium heat for 10-15 minutes, turning frequently.
Continue to brush the marinade onto each of the kabobs after each turn while grilling.
When the fruits and vegetables are slightly charred and tender, remove from the grill.
Depending on the protein you use, adjust your grilling time for the meat.
(For instance, shrimp cooks faster than chicken.)
Once the meat is grilled to taste, remove from grill and enjoy alongside the grilled fruits and vegetables!
